As Ryan mentioned it is possible but not encouraged (which is why there is
no Graphical user interface for the feature and you must be willing to
edit configuration files if you are absolutely sure you want to change the
default format and take the risks that come with it).

If you do decide to change the default save format I would encourage you
to consider choosing OpenDocument/OpenOffice.org format as your default
rather than Microsoft Word.
This is an option worth considering and since you can recommend the
OpenDocument plugin for Microsoft Word.
