AbiWord and Unicode

I've just downloaded AbiWord for the Mac and have discovered it supports
unicode. Excellent!! My question is about unicode productivity.

I have a massive document (a large book), mostly in English but with a lot
of Buddhist Pali and Sanscrit words. The book was created with a pre-unicode
handmade bitmap font. I need to remap the accented characters to unicode
calls.

What tools both within and outside of AbiWord would be useful for this task?
Note, I'm working on a Mac. I've never worked with a Unicode font before.
What's recommended?

I propose to use Gentium, a beautiful open source font, but its mappings of
font positions is completely different from the antique font.

Any tips and assistance gratefully appreciated.
