You can apply for more than one project at the same organization, can't
you? During that period of my life euphemistically called college, I
was never interested in more than one project at any one organization
(and neither of my GSoC experiences were pleasant ones either), but I
had the feeling that I could have applied for multiple projects if I
wanted.
BTW, is it starting later this year? It seems like it should be well
into the "community bonding" period by now.
