I do not like the 'apply to document' string. I think it creates the
impression that selecting that radio button sets the language for
everything in the document to whatever is chosen. In reality it does
not, it only changes the document-wide default, i.e., it only affects
text for which no explicit lang markup exists. So if you select the
whole document and set the lang to fr-FR, get rid off the selection and
then go back to the language dialogue and select en-US 'apply to
document', it will make no difference -- everything in the document is
still treated as fr-FR.
